Regions of provinces along Korea's eastern coast, such as Hamgyeong-do and Gangwon-do, have well-developed sikhae traditions. The western coast produces large quantities of salt thanks to the big difference in the tide's ebb and flow. The eastern coast's lack of this advantage resulted in the invention of a method that uses less salt and a small amount of grain. The following are three types of sikhae that best represent the unique fermented flavors of Korea's eastern waters.
