Side dishes differ by meal, but one thing has remained a core part of every meal over millennia: rice. The Korean faithfulness to rice is unique, even among other rice-eating countries. Indeed, it is common for someone who has eaten noodles with every meal on a given day to say that they feel “like something is lacking” because they did not have any rice. It is thus no surprise that Koreans are profoundly appreciative of the unique merits of rice that are not found in wheat. Rice cooked with seasonal ingredients is often served at high-end restaurants. Instead of plain rice, how about ordering a mixed version next time?
