In an age devoid of not only refrigerators but also ice boxes,
ice was the crown jewel of Korea’s hot summer months.
Ice that was harvested in the winter by picking away at frozen rivers was put into large underground facilities.
Thanks to the wisdom of ancient Koreans, ice stored in the winter was able to be kept well into summer.
Hard work done in winter was repaid in the summer with culinary luxuries:
the preserved ice kept food ingredients fresh and allowed for various chilled foods and beverages.
The August 2022 issue of <Korean Food Lifestyle Magazine> spotlights ice,
which was more precious than jewels at the height of summer,
and its relationship to Korean food.
