Soebireumnamul and yangbaechu

Today, vegetables have become food ingredients to be selected for our health. Containing diversified nutrients, vegetables provide help to the health care. However, according to Professor Jeong Hyegyeong at the department of food nutrition studies in Hoseo University, eating excessive amounts of food becomes poisonous when too much of even good foods is eaten and hence needs to be avoided, although it is a proven fact that vegetables are a food with less side effects than any other foods.

Now that Soman 小滿 with the summer atmosphere beginning to prevail has passed, we will find more details about Soebireumnamul(Purslane) and Yangbaechu(Cabbage) for health care during the hot and humid summertime.

Soebireumnamul

Soebireumnamul that produces more vitality under the hot sunlight in summer season, and stores much water in leaves and stems so as to avoid drying and death even after drought for a few days. Soebireumnamul contains tannin and saponin, beta-carotene, gluten, potassium, vitamins C, D, E, and is a food containing omega 3 fatty acid as the essential fatty acid most.

It is also known as the medicine controlling sore, abscess, diabetes. Also it is beneficial to prevention and treatment of inflammatory diseases to the extent of being the main ingredient for “ointment” applied when abscess has occurred. It is helpful for arthritis, pneumonia, pulmonary tuberculosis, gonorrhea, eczema, etc. when fresh juice is produced for drinking. Since soft buds continue to be produced from spring to fall, it is collected and blanched at any time to be consumed as Namul.

Yangbaechu

Yangbaechu counted as 3 key long-life foods in the west. It is a food beneficial to health to the extent of being ranked 2nd among the foods preventing colorectal cancer and gastric cancer. Vitamins U, K as the representative compositions of Yangbaechu are known to be capable of preventing gastritis and gastric ulcer, even gastric cancer by protecting gastric mucosa and increasing blood flow rate. However, since duration is short in the immunity activity of Yangbaechu daily continuous ingestion rather than eating all at once is important.

For Yangbaechu, picking of the one with a round shape and light green color is recommended. Heavy and hard Yangbaechu rather than light-weight one is better. For fresh storage of Yangbaechu, it is to be wrapped with vinyl wrap for refrigerated storage after putting water-wetted kitchen towel in the part with the wick cut out.
