Ganjanggejang(Soy sauce marinated crab)

Ingredients & Amounts / to serve 4 people

Female crab 4 each(220~250g)
Soy sauce: Traditional soy sauce 2 cups(500ml), Dark soy sauce 4 cups(1L), Water 12 cups(3L), Refined rice wine ⅓ cup, Whole ginger 1 piece (25g), Peeled garlic 10 each(50g), Dried pepper 2 each(6g), Water 2 cups(500ml)

 

 

To prepare
1. Remove water by wiping and washing crab with a brush
2. Place crab in a large container so that the abdomen faces upward
3. Cut the dried pepper into halves, and cut the whole garlic and ginger into slices eating

 

 

To cook
1. After putting dried pepper, garlic, ginger in the container with crab, Press it down with a plate to prevent floating up, Pour soy sauce water in and leave them overnight.
2. Pour the soy sauce water into a pot, add 2 cups of water, boil it and then cool it down.
3. Pour the cooled soy sauce in the container with crab, leave for a day, and then eat.

 

 

TIP
When you pick up the crab, store it in a freezer, take out one by one and thaw it for unsalty eating for long time. Female crab has eggs making it taste more delectable than male crab.
