Recipes of Nutty and Healthy Delicacies ─ Tasty Transformation of Ogok and Bureom
Rediscovery of Korean Food
Ogokbap(steamed five-grain rice) which has a chewy texture and nutty flavor, and nuts for bureom are nutritional health foods that stimulate our palate without adding other side dishes or flavors. However, if you add well-matched ingredients and change the method of making it, you can enjoy different tastes and textures.
Let’s set a table of tasty and healthy delicacies by using ogok and bureom so that we can remember this first full moon day as being more special.

A Hearty Delicacy for Anti-aging Yeongyangbap Gangjeong(Deluxe Rice Puffs)
Black rice contains four times more anthocyanins than black soybeans, which are known to have antioxidant, anti-cancer, and anti-ulcer effects. Compared to white rice, brown rice is rich in vitamins, minerals, and dietary fiber, which helps prevent constipation, discharge harmful substances, and prevent aging. Add golden oak mushrooms, assorted nuts, and ground beef to it, and bake it in the shape of a ball to make a tasty snack with a crispy texture. If you serve it with sweet and sour mustard sauce, it’s at the same level as the restaurant's high-end à la carte dishes.
Ingredients(2 servings)
1/2 cup black rice, brown rice and white rice, 2 golden oak mushrooms, 1/4 onion, 3 scallions, 1/3 cup assorted nuts, 150 g ground beef, 1 egg yolk, 1/2 tsp salt, 1 tsp each soy sauce and oyster sauce, 2 tsp each chopped garlic and sesame oil, a little bit of pepper
How to make it
① Mix black rice, brown rice, and white rice to cook mixed grain rice, and cool.
② Finely chop golden oak mushrooms, onions, scallions, and nuts.
③ Remove the blood from the ground beef. Add the chopped ingredients, egg yolks, and mixed grain rice with salt, soy sauce, oyster sauce, sesame oil, chopped garlic and pepper, and mix thoroughly.
④ Knead the dough until it is slightly sticky, then make it into bite-sized pieces, heat a pan greased with cooking oil, add the dough, and roast it.
⑤ Make mustard sauce and serve together.
TIP_ Note on the procedure
- Remove the blood from the beef so that the dough does not get watery.
- Stir-fry onions and mushrooms first to let the moisture evaporate, and then knead it.
- For nuts, prepare peanuts, almonds, walnuts, etc.
A Side Dish That Protects Respiratory HealthDeodeok Gyeongwaryu Yeot Jangjorim(Deodeok and Nuts Braised in Taffy)
Deodeok, which is rich in fiber, has a chewy taste and a unique deep flavor that stimulates the palate. It was referred to as “the meat from the mountains.” Saponin, which gives the bitter taste of deodeok, promotes the secretion of bronchial mucus to keep the lungs and bronchi from drying out. As it contains various vitamins and minerals, it helps regain vitality in the winter when energy is low due to the cold weather. Let's make a sweet and savory nutritious side dish by adding soy sauce and jocheong to neutralize the characteristic bitter taste of deodeok, and enhance the taste of rice. If you add walnuts and pine nuts to add nuttiness, you can bring back the lost appetite.
Ingredients
5 deodeok roots, 1/3 cup walnuts, 1/4 cup pine nuts, 2 tbsp brown sugar, 4 tbsp soy sauce, 150 ml water, 2 tbsp jocheong, 1.5 tbsp sesame oil, 1/2 tbsp sesame seeds
How to make it
① Wash deodeok, remove the soil, make long cuts on it, peel the skin lengthwise, and cut it diagonally.
② Put brown sugar, soy sauce, and water in a pot, and boil over medium heat.
③ Reduce heat to medium-low, add deodeok and boil for 10 minutes, then add walnuts, pine nuts, and jocheong, and cook until the broth is almost boiled down and the color is deep.
④ Add sesame oil and sesame seeds, mix lightly, and turn off the heat.
A Nutritional Snack That is Good for Vascular HealthSusu Gyeongwaryu Seolgitteok(Steamed Sorghum and Nuts Rice Cake)
Sorghum, with its chewy texture and nutty flavor, is eaten mixed with rice, but it is also often used in tteok, juk(porridge), and bukkumi(pan-fried rice cake) in harmony with the sweetness of red beans. Sorghum can prevent vascular diseases and various adult diseases, helping improve blood circulation by lowering cholesterol in the body. Nuts also help improve blood cholesterol levels, and using sorghum and nuts together will be an ideal nutritious snack to strengthen blood vessel health. Steamed sorghum and nuts rice cake is a delicacy with a rich texture, and is made by using jujubes, walnuts, pumpkin seeds, and peanuts.
Ingredients(4 servings)
1/2 cup sorghum, 150 g millet powder, 300 g wet non-glutinous rice powder, 4 jujubes, 3 tbsp each of walnuts, pumpkin seeds, and peanuts, 4 tbsp pine nuts, 2 tbsp brown sugar, 4 tbsp sugar
How to make it
① Peel the jujubes around, cut them into 3-4 parts, and chop the walnuts coarsely.
② Pour 3 cups of water into a pot, add sorghum and boil for 15 minutes, and drain the water.
③ Put brown sugar and 4 liters of water in a pot, and boil it. When the sugar dissolves, add walnuts, pumpkin seeds, peanuts, and pine nuts, and cook until it is shiny.
④ Mix non-glutinous rice powder and millet powder, and sift it twice.
⑤ Pour water little by little, and mix by rubbing with the hands.
⑥ If it does not break when held lightly by hand, mix with sugar and sift once more.
⑦ Lay a wet cotton cloth on the steaming steamer, put the mold on top, and place the powder flat.
⑧ Add the boiled nuts, millet, and jujube on top, cover with a cotton cloth, and steam for 25 minutes.
A Winter Snack That Helps Improve Immunity
Hodu Gotgam Chapssal Hotteok(Walnut Gotgam Sticky Rice Pancake)
Hotteok(syrup-filled pancake) is a winter snack that has been freshly baked, and has a warm, chewy texture, and sweet flesh. It makes you want to eat it again and again. However, considering health and calories, you cannot eat it as you please. So, how about making a more delicious and healthy winter delicacy by using walnuts and gotgam? Gotgam becomes richer in taste and nutrients as it dries. Beta-carotene increases three to 10 times that of persimmons, and tannins, which give a bitter taste, become insoluble, further enhancing the sweetness. Moreover, gotgam is rich in vitamin C, which is beneficial for strengthening immunity in the winter.
When hotteok is filled with gotgam and walnuts, the nutrients of gotgam and the unsaturated fatty acids in walnuts are served, so you can enjoy a nutritious winter snack with a nutty flavor.
Ingredients(2 servings)
Main ingredients: 1 cup sticky rice powder, 2 cup flour, 1.5 tsp dry yeast, 1 tsp salt, 1 tbsp sugar, 1.5 cups warm water, 2 tbsp melted butter
Hotteok stuffing: 1/3 cup walnuts, 2 gotgams, 3 tbsp each brown sugar and white sugar, 1 tsp cinnamon powder, 1/2 tsp salt
How to make it
① Put warm water and instant dry yeast in a bowl and mix well.
② Sift the sticky rice powder and flour through a sieve, add salt and sugar, and mix.
③ Pour in the water mixed with the yeast, and knead. When you don’t see dry powder, add the melted butter, knead it a little more, cover it with a plastic wrap, and let it sit in a warm place for at least 30 minutes.
④ Coarsely chop walnuts and gotgam, and mix with the rest of the hotteok stuffing.
⑤ Form the dough into a flat shape, put in the stuffing, and close it.
⑥ Heat a pan with plenty of cooking oil over medium heat, then put the hotteok dough on it, and bake it on both sides until golden brown.
TIP_ Note on the procedure
- Chop the walnuts, and gotgam used as stuffing should be chopped into an appropriate size. If it is too finely chopped, it will not be chewy, and if it is too large, the dough will easily burst.
- You can omit the cinnamon powder, and use one type of sugar.
- You can use peanut powder instead of walnuts.
