Bajirakkalguksu(noodle soup with clams)
Ingredients & amounts (to serve 4 people)
500g of dry noodles(or 600g of raw noodles), 2 green peppers, 1 red pepper, ½ zucchini(75g), 1 tablespoon of minced garlic, pinch of salt, 4 tablespoons of soy sauce, and some pepper powder.
Clam soup
2 cups of clam, 10 cups of water(2.5L), 1 tablespoon of rice wine
Seasoned soy sauce
4 tablespoons of soy sauce, 1 tablespoon of red pepper powder, 4 tablespoon of water, a pinch of salt, 2 tablespoons of chopped green onions, 1 tablespoon of minced garlic, 2 tablespoons minced green pepper
To prepare
1. Wash clams thoroughly in salt water, put them in a pot, pour 10 cups of cold water,
boil them over high heat, and turn off the heat and fish them out when the clam opens its mouth.
2. Pour the clam soup into another pot and discard the remaining dregs.
3. Season clam soup by adding rice wine, soy sauce, and salt, and turn off the heat when it boils over high heat.
4. Cut zucchini into 0.3cm thick circles and slice green onions diagonally.
5. Cut the pepper in half, remove the seeds, and shred it.
6. Mix the rest of the ingredients in the soy sauce to make seasoned soy sauce.
To cook
1. Boil the clam soup hard in a large pot. Put and stir the noodles so that they don't stick together for about 5 minutes.
2. When the noodles are half cooked, reduce the heat and add the pumpkin, green onion,
and red pepper. Boil it for another 5 minutes until the noodles are cooked.
3. Put the boiled kalguksu each in a bowl for 1 serving and pour the clam soup.
Seasoned soy sauce is added separately and added to suit your taste.
TIP
Kalguksu noodles can be used on the market. Instead of clams, it is also tasty to use seafood such as oysters, shellfish, shrimp, and mussels together to make as seafood kalguksu.
