Mineomaeuntang(spicy croaker stew)
Ingredients & amounts (to serve 4 people)
Mineo(Croaker) ½ 1kg), Beef 120g, Water 8 cups(2L), Young zucchini 90g, Water parsley 60g, Large green onion 1 stem, Red pepper 1 each, Green pepper 2 each
Meat seasoning
Korean-style soy sauce 2 small spoons, Minced green onion 4 small spoons, Minced garlic 2 small spoons, Sesame oil 2 small spoons, Black pepper Some
Stew seasoning
Red pepper powder 1 large spoon, Sesame oil 1 large spoon, Korean-style soy sauce 1 large spoon, Minced garlic 2 small spoon, Minced ginger 1 small spoon, Refined rice wine 1 large spoon, Salt some
To prepare
1. After properly scratching scales off of Mineo and removing fins, remove intestines and cut into 5cm pieces.
2. Slice beef thin and evenly mix with the meat seasoning. After frying in a pot, put in the used water from washing rice and boil it to prepare Jangguk.
3. Split the young zucchini into halves and cut them into 1cm-thick half moon shapes.
4. Cut only the stem of water parsley into 5cm lengths
5. Cut the large green onion and pepper aslant
6. Put sesame oil in the pepper powder and mash them, followed by preparation of stew seasoning by mixing it with other ingredients.
To cook
1. Put the seasoned meat in the heated pot, fry it until meat is cooked on the medium fire, and the pour water to boil it for 10 min on the medium fire to prepare the Jangguk.
2. Put the stew seasoning in the boiling Jangguk, and put in Mineo and young zucchini to boil them until Mineo is half-cooked.
3. When Mineo is cooked for more than half, put in green onion, pepper and water parsley followed by boiling them until Mineo is cooked completely.
TIP
Jogigochujangjjigae, Ssogarimaeuntang, Ureokmaeuntang are also boiled by the same method.
