Danhobakjjim (steamed sweet green pumpkin) filled with Smoked Duck

Sweet yet nutritious, danhobak (sweet green pumpkin) is not only delicious but also a low-calorie and healthy food. If you want to prepare a visually stunning dish with this danhobak, try adding smoked duck. It will complete a hearty meal with harmonious flavors and balanced nutrients.

Danhobakjjim

Ingredients

500g smoked duck, 1 danhobak, 1 cup of tteok (rice cake), 80g of pizza cheese, 1/2 onion, 1 paprika, 1/2 bell pepper, 4 cloves of garlic


[Seasoning Sauce] 2T gochujang (red chili paste), 1.5T gochugaru (chili pepper powder) , 2T soy sauce, 1T maesilcheong (plum extract), 1T sugar, 1.5T minced garlic, 1T saenggangsul (ginger liquor), 2T cheongju (refined rice wine), 1T oligo syrup

① Wash the danhobak and microwave it for about 3 minutes.

② Cut off the top of the danhobak, scoop out the seeds with a spoon, then microwave it again until fully cooked.

③ Grill the smoked duck in a pan, then add vegetables, seasoning sauce, and boiled rice cakes and stir-fry.

④ Fill the cooked danhobak with the smoked duck stir-fry and cheese, then bake it in the oven or air fryer until the cheese melts.

Recipe Tip! When washing the pumpkin, rub it with baking soda for thorough cleaning. To evenly cook the pumpkin, flip it over when microwaving it, alternating top and bottom.

Neulgeunhobakjuk (aged pumpkin porridge)

What makes pumpkin even more delicious? It's none other than time itself. Neulgeunhobak, having undergone a long maturation process, imparts a deep and rich flavor that corresponds to the duration it has been aged. When you need the profound flavor and rich nutrients of pumpkin, try making aged pumpkin porridge. You'll feel warmth enveloping your body and soul to the very core.

Neulgeunhobakjuk

Ingredients

850g neulgeunhobak (aged pumpkin), 250ml water, 4 tablespoons glutinous rice flour, 150ml water, 3 tablespoons sugar


Directions

① Cut the pumpkin into small pieces, then place them in a pot with 250ml of water and bring to a boil.

② Once the pumpkin starts to soften, mash it gently and stir well to prevent sticking.

③ Mix glutinous rice flour with 150ml of water to make a slurry, then mix it thoroughly with the pumpkin.

④ Add sugar according to taste, then simmer while stirring evenly.

Recipe Tip! Adding cold water in the middle of boiling the noodles will enhance its bouncy texture. After rinsing, the noodles should be completely drained of water to prevent the flavor from becoming bland.

Aehobak Bibimguksu (Noodles topped with zucchini)

Aehobak (zucchini), tender yet sweet, has been a staple in various dishes since ancient times, firmly establishing its place on our dining tables. When craving a light and wholesome meal, consider making aehobak bibimguksu. With generous portions of soft aehobak combined with noodles and soy sauce, you will enjoy a refreshing and delightful meal.

Aehobak Bibimguksu

Ingredients

1 serving of somyeon (thin wheat noodles ), 1/3 zucchini, 1/5 carrot, 1/4 onion, Sesame seeds, Gim flakes, Salt

[Seasoning Sauce] 0.5T minced garlic, 2T soy sauce, 1T tsuyu (Japanese soy sauce), 1T sugar, 1T sesame oil, 1T vinegar


Directions

① Slice the carrot, onion, and aehobak into thin strips.

② Heat oil in a pan and stir-fry the onion, aehobak, and carrot with a pinch of salt.

③ Place the somyeon in boiling water, then rinse it in cold water and drain using a strainer.

④ Mix the somyeon with the prepared seasoning sauce in a bowl, then top with the stir-fried vegetables, gim flakes, and sesame seeds for garnish.
