Yukhoe Tartare
Tartare is a French-style yukhoe dish made by finely chopping raw beef and adding spices. It differs from Korean yukhoe in its use of Western spices like capers. For this year-end, let's prepare a yukhoe tartare made with Korean seasonings that brings out rich flavors. Accompanied by crackers, you can easily create a finger food that exudes a party atmosphere.
Ingredients
300g beef for yukhoe, 2-3 stalks green onions, 1 tablespoon of minced red onions, 1 tablespoon of minced capers, 3-4 pieces of crackers, whole-grain mustard
[Seasoning for Yukhoe] 2 tablespoon of soy sauce, 2 tablespoon of sesame oil, 1 tablespoon of sugar, 1-2 pinches of seasoned salt, a little of minced garlic,
Directions
① Finely chop 1-2 stalks of red onions, capers, and green onions.
② Mix the prepared seasoning with 300g of beef for yukhoe and the ingredients from step 1.
③ Shape the seasoned yukhoe using a round mold.
④ Place a half tablespoon of whole-grain mustard on the shaped yukhoe, and decorate it with remaining green onions and crackers.
A Delicious Meeting
Yukhoe and Gamtae Gimbap
Gimbap is a Korean dish that can transform into various flavors based on one’s preferences, such as Keto Gimbap filled with eggs or Gimbap made with mugeunji (aged kimchi). Among these variations, the combination of reddish yukhoe and bluish gamtae (dried seaweed) is not only visually appealing but also perfect as a dish for home parties. The savory taste of gamtae and the sweet yet nutty flavor of yukhoe blend together to offer a sophisticated taste and texture.
Ingredients
2 sheets of gamtaegim (dried seaweed), 100g pickled radish, 1 serving of brown rice, some green onions, 1 egg, 1 tablespoon of sesame oil, 0.3 tablespoon of salt
[Yukhoe Seasoning] 100g of beef for yukhoe, 0.5 tablespoon of sugar, 0.5 tablespoon of soy sauce, 0.5 tablespoon of sesame oil, 0.3 tablespoon of minced garlic
Directions
① Season the brown rice with 0.3 tablespoon of salt and 1 tablespoon of sesame oil.
② Place 2 sheets of gamtaegim on a gimbap roller mat, followed by brown rice and pickled radish, then roll it up.
③ Cut the completely rolled gamtae gimbap into manageable pieces and place them on a plate.
④ Mix the beef for yukhoe with the prepared yukhoe seasoning.
⑤ On top of the gamtae gimbap, add the yukhoe mixture, green onions, and egg yolk in sequence as a finishing touch.
A Savory Transformation of Pasta
Deulgireum Yukhoe Pasta
Pasta is a favorite menu item for home parties. It's an easy dish to make that enhances the party atmosphere with various toppings and flavors, delighting both the guests and the hosts. This holiday season, let's try making a unique yukhoe pasta with thick fettuccine and fresh yukhoe. You'll experience the tender and chewy texture of yukhoe along with the rich and nutty flavor of deulgireum (perilla oil).
Ingredients
200g of fettuccine, 300g of beef for yukhoe, bean sprouts, 2 tablespoons of deulgireum, 2 tablespoons of tsyu, oriental dressing
[Yukhoe Seasoning] 2 tablespoons of sesame oil, 2 tablespoons of soy sauce, 2 tablespoons of tsyu, pinch of salt, pinch of black pepper
Directions
① Boil fettuccine in boiling water for about 10 minutes.
② After boiling, drain the pasta and mix it with 2 tablespoons of deulgireum, 2 tablespoons of tsyu, a pinch of salt, and pepper.
③ Combine all the yukhoe seasoning ingredients with the beef for yukhoe.
④ Prepare bean sprouts with oriental dressing as a side.
⑤ Place the pasta with the prepared yukhoe and bean sprouts on the side.
⑥ Sprinkle parsley powder as a finishing touch.
