Jeotgal is usually invisible, hidden deep inside kimchi or dissolved in a hot soup.
Even if served separately, it comes only in very small quantities
in a tiny bowl as a seasoning or, occasionally, as a side dish.
At the Korean table, jeotgal seems to be a supporting character, not the lead.
But after tasting most Korean foods, this opinion soon changes.
Without jeotgal, would Korean food taste as good as it does?
We have jeotgal to thank for the richness and depth of Korean fermented foods,
which are becoming increasingly recognized worldwide.
