Jeotgal is so prevalent in Korean food that even those who do not know what it is or particularly enjoy it have tasted at least one kind: saeujeot, a common and familiar jeotgal that is used to flavor kimchi or as a dipping sauce for suyuk (boiled pork slices). There is a lot more than meets the eye to this familiar salted seafood.
