Vol 39. Jang
Jang! Truly Deep and Deeper!
The depth of jang, perfected by adding nature, time, and the maker’s devotion, cannot be explained in just one word. This deep flavor has been fermenting its vitality in perpetual time. The deep flavor and permanence of Korean sauces are still alive in sauce museums.
Sunchang Traditional Paste Museum
When you hear Sunchang, Jeonbuk, the first word you can think of is “gochujang(red chili paste).” Sunchang gochujang (red chili paste), which was presented to the kings, represents the excellence and history of Korean gochujang (red chili paste) itself.
The Sunchang Traditional Paste Museum was the first museum in Korea to be built under the theme of sauces. It opened in 2007. When you enter the museum, the first thing you see is the “King’s Royal Table.” It is an exhibition space that shows that Sunchang gochujang (red chili paste) was a present to the kings. You can take a photo wearing the king’s garment.
The Sunchang Traditional Paste Museum consists of three themed exhibition rooms and special exhibition rooms. You can learn why Sunchang gochujang (red chili paste) is precious to the origin and history of sauces, how to make jang, and what are the unique sauces around the world at a glance. It is where you can check out the yeast fungus used for fermentation through your five senses, and where you can explore what is like being inside a large chili, the main ingredient of gochujang (red chili paste). In the special exhibition room, you can check the origin of Korean sauces and the local history of Sunchang through relics and literature materials.

Sejong Traditional Jang Museum
In Sejong, there is a traditional paste theme park called “Gourd Village,” which was built to continue the history of traditional sauces. The “Sejong Traditional Jang Museum,” which was built in this village, was established in 2013 as the first museum that specializes in the singular type in Sejong.
In the indoor exhibition hall made of hanok, you can see various historical records and relics related to Korean sauces, and learn about traditional methods of jang-making and the lives of our ancestors related to jang-making. In the space that displays the seed soy sauce and the jang crock of the mother of the founder of Gourd Village, you can experience the unique culture of jang-making in Korea. There is also an exhibition space where you can rediscover the diversity of soybean seeds, the raw materials of jang, and the crocks that hold the sauces.
The highlight of the Sejong Traditional Paste Museum is the outdoor exhibition space, built on a site of about 12,000 pyeong, with about 2,000 crocks placed in a magnificent view. All of the jangdoks (crocks) from all over the country are displayed here.
