Jukkumibokkeum (Stir-fried Webfoot Octopus)
Ingredients and quantity / based on 4 servings


1kg of jukkumi(webfoot octopus)
1 onion
1/2 carrot
1 green onion
3 chives
2 cheonyang peppers
5 teaspoons of red pepper powder
3 teaspoons of sugar
1 pinch of coarse salt
1 tablespoon of sesame oil
1 tablespoon of sesame seeds


 

seasoning
3 tablespoons of brewed soy sauce
1 tablespoon of red pepper paste
6 teaspoons of red pepper powder
4 tablespoons of chopped garlic
1 tablespoon of chopped ginger
2 teaspoons of pepper

To prepare
1. Rub the jukkumi with salt and wash it, and then cut it into pieces that are easy to eat.
2. Add brewed soy sauce, red pepper paste, red pepper powder, chopped garlic, chopped ginger and pepper to make the seasoning.
3. Cut the onion finely, and cut the carrot into flat pieces, similar to the size of jukkumi.
4. Cut green onion, cheonyang pepper, and red pepper diagonally, and cut the chives into 5cm long.


 

To make
1. Add vegetables, jukkumi excluding green onion, chives into the seasoning, and mix them.
2. Add red pepper powder, sugar and coarse salt.
3. Put them on high heat, mix the remaining seasoning, and 200ml of water then fry.
4. Add sesame oil, sesame seeds, green onion and chives to finish.


 

Tip
It is better to mix the seasoning before frying and let it sit in the refrigerator for 20 minutes. If you don't think salty enough, add coarse salt.
