Gamjajeon(potato pancake)

Gamjajeon(potato pancake)
Ingredients and quantity (4 servings)
4 potatoes (600g), 90g zucchini, 1 tablespoon of potato starch, 2 cups of water (500ml), ½ teaspoon of salt, cooking oil
Vinegared soy sauce: 2 tablespoons of soy sauce, 1 tablespoon of water, 1 tablespoon of vinegar, ½ tablespoon of red pepper powder, 1 green pepper
To prepare
1. Peel potatoes and grind finely on a grater (blender).
2. Wash the zucchini and slice it.
3. Mix soy sauce with water, vinegar, and red pepper powder and add finely chopped green pepper to make a sauce.
To make
1. Mix zucchini with ground potatoes and knead with water, salt, and potato starch.
2. Put cooking oil in a hot-heated pan, and scoop the dough one by one and spread thin and round on the pan.
3. When the cake becomes ripe and transparent, turn over and stay it on the pan until becoming yellow.
4. Put the cake a plate and serve with the sauce.
TIP
Potato cake, the local food, is made by grinding potatoes on a grater, squeezing them tightly in gauze, and then mixing the ingredients with the sunken starch. When potatoes are peeled and ground, it will quickly turn black. So, they shall be cooked and eaten immediately.
